My Easiest Granola Recipe

I've never liked granola bars. Anything that sticks together like that doesn't appeal to me. They're often tough and chewy, dry, or too sweet. I try to avoid the things that have added marshmallows, chocolate chips, and so forth. To me they destroy not only the flavor, but any health benefit as well. However, loose granola is another story. I enjoy it as a snack, all by itself.

Recently, when I found out that my cholesterol was too high despite a high level of activity and good weight control, I realized I had yet another reason to dig into granola. The oats are recommended for reducing cholesterol and I could even throw in some nuts and fruits that naturally contain plant sterols that also act to reduce cholesterol levels.

I sometimes buy bulk granola, but what I really prefer is to make my own. I have a wide variety of recipes I use, but I have one in particular that is very simple, tasty, and requires only a few basic ingredients. You can easily alter the type of nuts or fruit you add to this recipe. I love cashews and dried cherries. To me the cashews have a more distinct flavor than many nuts and the cherries definitely add a tart kick to the mix.

This is the recipe for my easiest granola:

INGREDIENTS

1 3/4 cups old fashioned oats
1/4 cup honey
1/2 tsp vanilla
1/3 cup cashew pieces or halves
2 Tablespoons low fat margarine*
1/2 tsp cinnamon
Dash of salt
3 ounces dried cherries, halved

PUTTING IT TOGEHTHER

Preheat the oven to 350 degrees Fahrenheit.

Combine oats and cashews in a 9x9 square bake dish. In a small bowl, combine melted margarine or Benecol, honey, vanilla, cinnamon, and salt. Pour over the oat/cashew mixture and stir until mixed thoroughly. Spread evenly across baking dish and put in the oven to bake. Bake for 25 mintues, stirring every 7 to 8 minutes. Remove from the oven, add in the cherries, stir, and then allow to cool.

This can be stored in a sealed container after cooling and used over a period of several days.

*I actually use Benecol rather than margarine due to my higher cholesterol. It tastes like regular margarine but also offers plant sterols.

I agree with you, the granola bars are rather a waste of time. They don't really fill me up, and although I like cereal for breakfast, I don't like it too sweet and sticky.

Loose granola though, I love it, and like you I can quite happily eat it dry for a snack. I really enjoy it for breakfast with milk and a banana chopped into it. You can't easily buy granola here in the UK, except in health food stores, so I might try this recipe and adapt it to my own ingredients.
